This is the ultimate leftovers dish… I honestly just chucked whatever I could find in the frying pan! However, I do have a few suggestions…
Makes unknown quantity • around 30 mins

Ingredients:
- 1 sweet potato
- 1 red onion, diced
- 1 clove garlic, chopped finely
- 1 tbsp mild curry paste
- 2 tbsp Greek yogurt
- salt
- pepper
- any leftover veggies, e.g. spinach, peas
Method:
- Start by microwaving your sweet potato until it is soft and steaming. When it is cooked through, cut it in half and leave to cool for a bit. Then dice it into bite sized chunks, removing the skin if you wish.
- Fry the onion in some oil until soft, then add the garlic.
- Add your curry paste and stir to cover the onion and garlic.
- Add the sweet potato and any of your prepared veggies to the pan and stir.
- Now season, and add the Greek yogurt. Stir this around, until it creates a creamy curry.
- Serve, with rice, on toast, with salad – anything you fancy!
This is a very easy curry, good for cutting corners, when you want a filling proper meal, with minimal effort involved. Nice end-of-the-week meal.

Costs: from Tesco, £5.74 – this is a lot because it includes bulk buying potatoes. Also, the curry paste and Greek yogurt lasts for longer than just the one meal, so works out cheaper overall.
