Chocolate Chip Cookies

Hello!

Only a slight lapse in time since my previous post… there may well be a slight deluge of recipes to come your way as a result! First up is my first sweet recipe – chocolate chip cookies.

Makes around 18 cookies (depending on size!) • 40 minutes • Super easy!

Ingredients:

  • 7oz golden caster sugar
  • 7oz softened butter
  • 8oz plain flour
  • 1tsp bicarbonate of soda
  • 1 large egg, beaten
  • 1½tsp vanilla essence
  • 150g milk chocolate, chopped (higher quality chocolate = yummier cookies, recommend Lindt)

Method:

  1. Mix the dry ingredients (sugar, flour, salt, bicarb) in a bowl, along with the butter. The mixture should form breadcrumbs.
  2. Mix in the chocolate chips.
  3. Next, add the vanilla essence to the beaten egg. Pour this mixture in with the breadcrumbs, gradually. The mixture should form a slightly sticky dough.
  4. Now divide the dough up – take a tablespoon and put a spoonful in a small ball on a well greased baking tray. Leave plenty of room between the balls – these cookies spread a lot!
  5. Bake in the oven until golden brown; this should take 10-12mins.
  6. Remove from the oven and leave to cool. If they are still slightly squishy when you take them out, this is okay as it will give you a gooier cookie!

It’s as simple as that!

I have made several variations of these cookies, in an aim to make them spread less. To follow are some of my top tips:

  • Use half salted butter, and half margarine, and use just 6oz of sugar – this makes them slightly less greasy, and spread less.
  • When putting balls of dough on the baking tray, don’t flatten them down! This means they stay slightly thicker, gooier, and there is less spread.

 

Costs: from Tesco, £9.00 – this is definitely not the true cost of a batch of cookies. You could probably make 3 batches at least from the raw bought ingredients, as they last longer! I’d estimate it would be £3.00 MAXIMUM for a batch, if that
