Fried Rice

Ok, so not the healthiest, nor the most complex, or interesting – however, it tastes good and is a nice change sometimes, and a good way to use up extra rice! Be very careful though – when using leftover rice, ensure it has fully cooled down, before you store in the fridge, and then heat it fully when reheating.

Ingredients:

  • rice – any amount, whatever you have
  • 1 egg (or more if you have more than 2 portions of rice)
  • soy sauce
  • salt and pepper

Method:

  1. Heat a tablespoon of olive oil in a frying pan. Add your rice (either still hot after cooking, or fully cooled as leftovers).
  2. If cool, fry for around 10mins, continually stirring to prevent it burning. If warm, then fry for approx. 5mins.
  3. Add in soy sauce to taste and stir!
  4. Just as it is getting ready, push the rice to one side, and crack in an egg. Using a spatula, scramble the egg, and leave to set for a minute.
  5. When it begins to solidify, stir the egg through the rice, ensuring it cooks properly.
  6. Season to taste, and then serve.

Vegetables can easily be added to this to make a veggie rice stir fry. Ensure they are cooked properly. Sorry, but I have forgotten to take photos of this one!!!!

 

Costs: from Tesco, £2.04 – for a whole bag of rice and 6 eggs. Obviously making this costs a lot less per portion!
